2000年に創業したCafe Eightをはじめ、PURE CAFE、
8ablish（エイタブリッシュ）と形を変えながらこの南青山の地でお客さまに育てて頂きました。
エイタブリッシュは、“さまざまな背景を持った人々が同じテーブルを囲み、笑顔で食事ができるような空間を”というコンセプトのもと、グルテンフリーやヴィーガンの食事を提供し続けてきました。これからもそれは変わりません。
パンデミックを体験し、私たちはこれまで培ってきた様々なアイディアやクリエイションをより多くの人々に伝えていきたい、もっと役に立つことがしたい、という考えに至ったのです。
その実現のためにより良い環境を探し、それらを体現できる場所と出会えました。
2023年10月12日（木）をお世話になった青山の地での最終営業日とし、2023年11月24日（金）より、新天地となる麻布台ヒルズ、ガーデンプラザへと移転いたします。
新たに青梅市を拠点にオーガニックファームを営むOME FARMとタッグを組み、朝８時から夜９時までと営業時間を拡大し、これまで以上にオーガニックでトレーサビリティの行き届いた新鮮な食材を使った食事を用意いたします。オーガニックを中心とした食材で作るヴィーガン菓子、ケーキ、アイスクリーム、そしてBIOワイン、日本酒などのアルコール類、コーヒーも提供していきますのでご期待ください。
長きに亘り、この地で支えて下さったみなさまに感謝いたします。

Dear Customers and Clients,
8ablish (Eightablish) has been raised by our customers and clients since our first vegan cafe, Cafe Eight(established in 2000) and PURE CAFE were opened in Minami-Aoyama.
The vegan dishes and confections that come out of our kitchen can be enjoyed and shared by many people. And people who have food allergies and people who have limitations on what they can eat for religious reasons or health conditions can share from one plate. This has been the main concept of our restaurant.
Since 2019, we have experienced the pandemic all over the world, and we found that we would like to convey our ideas and powers of the creations as many people as possible, and would like to contribute to the future world with our skills.
We have searched for better environment to realize our wish, and finally encountered to the new opportunity.
We are closing PARLOR 8ablish on October 12, 2023, and will relocate to Azabudai Hills and reopen 8ablish on November 24, 2023.
At this occasion, we are pleased to announce that we are teaming up with Ome Farm that is well-known organic farm based in Ome, Tokyo, not only for the materials but also the food menu offered at the new restaurant.
Our new place will be open from 8am for breakfast (take-away only) to 9pm for aperitif and dinner, and we utilize a wide range of products that use organic ingredients with a high level of traceability through our new partner that share our same philosophy.
We will continue to provide vegan food, deserts, ice cream, confections, and natural wines and Sake, and non-alcohol drinks at our new place.
We would like to take this opportunity to thank you very much for your precious support since 2000, and we look forward to welcoming you again in our new restaurant in Azabudai Hills.
